The following inspections were conducted by the Lenoir County Health Department:

Observations:
No serve safe manager on staff.
No paper towels available at waitress station hand-wash sink.
Some foods are missing date mark sticker.
Spices are not labeled on spice shelf in kitchen.
Dishes observed stacked wet throughout restaurant.
Build up observed on shelving units, dish racks, bottom of coolers, on cooler gaskets, and under equipment on tables in kitchen.
Floor had lots of dirty water in areas from dish washing.
San Juan Mexican Restaurant

Observations:
Employee observed handling dirty dishes and then putting away clean dishes.
No trash can available at hand-wash sink beside dish sink.
Several dishes and utensils were found soiled with food remains.
Spray bottles of cleaners were not labeled.
Trash bags found in bottom of flour container.
Plastic cup and reusable small bowls being used as scoops. In-use utnesils must have a handle.
Several dishes were found stacked wet.
Build up observed on gaskets of refrigerators, bottom of equipment and coolers, and on the shelving units.
Leak at hand-wash sink in waitress station and under the prep sink at the back of the kitchen.
Dumpster missing drain plug.
Several floor tiles broken throughout kitchen.
Caulking along baseboard is not smooth and easily cleanable.
Floors, walls, and ceilings need additional cleaning.
Employee belongings need to be stored in a separate designated area.

Several pan, slicer knives, peelers, can opener, and bowls have not been cleaned thoroughly, are sticky, and have dried food particles.
Clili and cheese sauce were less than 135F.
Chef was not wearing hair restraint.
Wet wiping cloth laying on cutting board.
Ice scoop and sugar scoop were stored with hands contacting product.
Top of oven, faucet handles, sauce cart, and inside of freezers need additional cleaning.
Some floors and walls need additional cleaning.

Observed live roaches in kitchen and dry storage room.
One ice scoop stored on grate of soda machines and visibly dirty on oyster bar side.
Entire table of stainless steel pans stacked wet in kitchen.
Melted gaskets on Chicken Henny Penny.
Shelving units, outside/inside refrigerators, floor of walk in coolers, wire racks, clean dishes table, plate rack, dish racks, plate carts, etc.
Leak present at hand-wash sink in dish room.
Ceiling tiles have damage and holes present on ceiling in storage room.
Floors, walls, and ceilings need additional cleaning due to build up of dust, grease, flour, etc.
Backsplash at plate prep counter is heavily soiled.
Two employee drinks found in the dish washing room.

Water is still pooling over the filled in drain under dishwashing area.
